If you want to avoid that late afternoon lack of energy, one of the best ways to do that is to have a high protein lunch. Protein packed lunches take longer to digest than carbs and sugars keeping your energy consistent throughout the rest of the afternoon. There are lots of ways to fit protein in your lunches.
Salads are a staple on almost every lunch menu and by themselves don’t contain much in the way of protein, so you need to dress them up a little. Mixed greens have loads of nutrients that you need but to get some protein on that salad you need to add some toppings. Cooked shredded chicken and turkey are both delicious. Sliced leftover roast beef goes well along with a mustard vinaigrette dressing.
You can also use hardboiled eggs in salads, eggs contain selenium and choline both of which will help you stay energized. If you do eat dairy then a little hard cheese grated on top will add flavor and protein. It’s not just the toppings you can add some kale in with your mixed greens for added protein. Kale can have a pretty strong flavor so if you’re not much of a fan try the baby kale instead it is milder but with all the same nutrients.
Sandwiches and Wraps
If you miss sandwiches, don’t worry lots of people do but you can try making them with some paleo bread recipes instead of regular grain based breads. Make a regular, chicken, turkey or whatever kind of sandwich you like. Try using homemade mayo, you can whip up a healthy version quickly with a decent blender.
Wraps are also great but instead of using a tortilla or pita bread use some large leaf lettuce like romaine. You can throw in some seafood, eggs or shredded meat along with some mixed vegetables like organic peppers and tomatoes. You can use homemade mayo here too. It may be a little messier than a regular wrap but every bit as good and healthier.
Outside the Lunchbox
Never underestimate the power of leftovers. Leftovers are awesome for lunch, especially things like stews or paleo chili, it always tastes better the next day. If you make dinners in your crock pot, save the leftovers for the next day.
An alternative to leftovers or the usual lunch fare is to make yourself your own buffet. All that means is packing a bunch of “side dishes” or finger foods instead. You can put together some cold sliced chicken or turkey, actually any cold meat will do. Some fruit and nut butters for dip along with some hardboiled eggs. If you can’t decide what you want have a little bit of everything, this works great with fussy kids too.
Late afternoon is one of the worst times of day for energy burnout, it is three in the afternoon and all you want to do is go take a nap. A good protein packed paleo lunch can get you through the afternoons and if you still find yourself needing some energy grab a healthy snack.
