Eggs are a great choice for a healthy Paleo food. They are portable, contain protein, and fill you up. Eggs contain vitamins A, D, and E, lecithin, iron, proteins and sulfur and are good and healthy for you. They can be cooked in a variety of ways depending on your preference as follows:
Soft boiled eggs which use a shorter cooking time for softly set whites and runny yolks. These eggs can be eaten straight from the shell.
Hard-boiled eggs are boiled in water for a slightly longer time but should be less than twelve minutes so that the whites do not turn rubbery and the yolks crumbly.
Deviled eggs are hard-boiled eggs where the yolk is removed and replaced with a creamy filling that consists of the egg yolk, mayonnaise, salt, mustard, and pepper.
Scrambled eggs are eggs that are cracked in a mixing bowl and scrambled together with a folk. Milk or cream is added and the mixture is cooked in a pan containing butter.
Sunny side-up eggs are those that are cracked into a frying pan and cooked until the whites set but the yolks remain runny.
Over easy eggs are fried eggs that are cooked lightly on one side and turned over briefly.
Over medium are fried eggs that are cooked on both sides so the white is solid but the yolk is still soft and runny.
Over well eggs are thoroughly fried on both sides leaving the yolk solid.
Omelets are eggs that are whisked with salt, pepper and seasonings. This is poured into a non stick skillet over medium heat. Once cooked, toppings are added, and the mixture is then folded and served.
Poached eggs are eggs that are broken into simmering water and cooked for one minute. A spatula is used to loosen them from the bottom of the pan. They are poached for three to five minutes then removed with a slotted spoon.
Baked eggs where eggs are cracked into dinner rolls that are sliced open. The eggs are baked until set.
Egg salad is made up of hard-boiled eggs that are chopped and mashed together with mayonnaise, onion or celery. This is mixed and served on a sandwich.
